Rainbow Cakes in Bracknell

A rainbow cake is six sponges baked separately, coloured separately and stacked, so the rainbow appears when it is cut rather than when it arrives. A 6-inch starts at £100 and cuts 8–12 slices; the 8-inch at £130 cuts 14–18 and is the size most of these are ordered at. Made to order in Bracknell and delivered across Berkshire.

The outside can be as plain as you like. A white finish over a rainbow inside is the version that gets photographed; a rainbow outside over a rainbow inside is the version that disappoints.

What makes a cake a rainbow cake rather than a colourful one?

Where the colour sits. A colourful cake is coloured on the outside, in icing or fondant, and it looks the same cut or whole. A rainbow cake is coloured on the inside, in sponge, and looks ordinary until the first slice comes out. That is not a detail of taste but a different job in the kitchen: one is a decorating afternoon, the other is six tins of batter weighed into equal portions so the bands come out the same thickness.

Four ways to get a pattern inside a sponge

Rainbow — separate tins, separate colours, stacked: clean horizontal bands.

Zebra — two batters spooned into one tin from the centre: concentric stripes.

Marble — two batters poured together and dragged with a skewer: a random swirl.

Half and half — two cakes in one, split down the middle rather than layered.

How many layers does a rainbow cake need?

Six is the count people picture, and four is often the better cake. Each band needs enough depth to read as a colour rather than a line, and each one carries a layer of buttercream above it, so six bands in a cake of ordinary height make thin sponge and a lot of cream — sweeter than most people want. The honest options are to keep six bands and let the cake get taller, which is quoted in conversation on the tall cakes page, or to use four well-separated colours at a normal height. A 10-inch at £150 gives the widest bands of the three sizes here and cuts 22–28 slices.

Who is a rainbow cake actually right for?

Somebody who will be there when it is cut. The whole value of the cake is spent in one moment, and it is spent in front of an audience or not at all — which makes it excellent for a party where the cake is carried in and cut on the table, and a waste on a cake collected, sliced in a kitchen and handed round on plates. It is the standard first choice for a first birthday and for a unicorn cake, where the inside and the outside tell the same story. For a cake that has to impress before it is cut, drip cakes spend the same money where it can be seen from the door.

The three-colour version people remember from a shop is an angel slice.
