What is in it, if not butter and eggs?
Cashews, soaked and blended into a mousse that sets, with dried fruit, nuts, natural oils and syrups. That is the whole method: nothing is replaced with a substitute for butter or egg, because there is no sponge to hold together in the first place. The result is 7cm tall where a menu cake is five inches, and it is cut like a cheesecake rather than a layer cake.

How is a vegan cake different from your sponge cakes?
Four ways, and they are worth knowing before you choose. It is set rather than baked, so it holds its shape cold and softens warm. It is about 7cm tall against the five inches of a cake from the signature menu, so a slice looks different on the plate. It comes in one size, where a custom cake runs 6 to 10 inches. And it contains nuts by construction, where a sponge contains them only if you ask for them.
Is it safe for an allergy, or only for a diet?
For a diet, yes: there is no dairy and no egg in the recipe. For an allergy, the answer needs the rest of the sentence.
