Blini — Russian Pancakes Made to Order in Bracknell

Thin, yeast-raised pancakes with a faint sourness and a lacy edge — the Eastern European kind, not the thick American one and not the plain French crêpe. Savoury or sweet, made to order by the batch.

Quoted per order, because it depends on how many and what goes in them. Delivered across Berkshire from £30.

What makes a blin different from everything else round and flat?

The ferment. A blini batter is made with yeast and left to rise, sometimes twice, so by the time it hits the pan it is full of gas and faintly sour — and that sourness is the whole flavour. Pour it thin and the bubbles burst as it cooks, leaving the lacy holes that tell you it was made properly. A batter raised with baking powder cannot do this: it sets before it has had time to develop anything.

That is also why blini are the awkward one to buy. A supermarket blin is a small thick disc with no ferment in it at all, sold to carry smoked salmon; the thing people from Eastern Europe mean is a thin pancake the size of a plate, and the two share almost nothing but a name.

Why are blini eaten for a whole week?

Because Maslenitsa is a week, not a day. The week before Lent is the last one in which butter, eggs and milk may be eaten, and blini use all three — so they are eaten daily, with everything, until the fast begins. The round golden shape is explicitly a sun, which is why the week ends with fire and with the last of the butter.

In Britain the same logic collapses into a single Shrove Tuesday with a lemon and a bag of sugar. The dates coincide, so if you are ordering for Pancake Day you are ordering in the same week as everybody else who grew up with Maslenitsa — ask early. The Easter page has what follows the fast.

What else is made here from the same tradition?

Syrniki — fried cottage-cheese cakes, eaten for breakfast with sour cream — and at Easter kulich and paska. On the cake side it is medovik, Napoleon, Spartak, Kyiv cake and bird’s milk: 6 of the 14 cakes on the signature menu come from this tradition, all built from thin layers rather than sponge, and all better on their second day than their first. Unlike a Victoria sponge, which is at its best within hours, a layered cake is assembled a day before it is meant to be eaten.
