Crown, castle or colour?

Three versions of the same idea at three very different prices. Colour alone — a blush cake with gold detail — is the cheapest and, for a small child, often the prettiest: it photographs well and nothing on it can break in the car. A crown at £30 adds the one object that names the theme, and it leaves the party as a keepsake.

A castle is the full build: towers that must be modelled, dried and attached, a gate, a roofline. It is the version people picture and the version that costs the most hours, so it is quoted per design rather than listed. The middle road most families take is height instead of architecture — two tiers, a crown on top, and the budget spent on the cake rather than on sugar masonry.

Why is pink and gold the combination that works?

Because gold is a texture rather than a colour, and pink is the colour buttercream wants to be. Butter and sugar whip to a pale cream, so the smallest trace of pink gives blush without any of the dosing problems a deep shade brings — and gold leaf or sparkle sits on top of that as a highlight rather than a second colour competing with the first.

The palette that disappoints is pink with silver, which goes cold, and fuchsia with gold, which goes loud. The pink page sets out the five pinks people mean by the word, and black and gold is the grown-up version of the same trick.

What is a prinsesstårta, and can you make one?

It is Sweden’s most-sold cake and a genuinely specific thing: sponge layered with raspberry jam, vanilla pastry cream and a tall dome of whipped cream, the whole of it wrapped in a thin sheet of pale green marzipan and finished with a marzipan rose. It was named for three Swedish princesses who were said to be fond of it, and the green is not decoration — it is the cake’s signature.

It is not on the list here, and this page would rather say so than improvise a green dome. What this kitchen does make in that family is a layered cream cake — the fresh cream page explains how those are built and kept, and the layered cakes are the ones it is actually known for.
