Black & Gold Cakes in Bracknell

The adult party palette, and the one colour on the list with a real catch. Black buttercream needs enough colouring paste that you can taste it and it stains mouths; fondant gets to a true black at a fraction of the dose.

So a black cake here is usually a fondant-covered cake, with the gold laid on top as leaf or sparkle at £7–£15. From £130 for an 8-inch.

Why is black the hardest colour in a kitchen?

Because of where it starts. Buttercream is pale yellow, and yellow is the colour black has to travel furthest from — adding black paste to it goes through grey, then grey-green, then a dirty charcoal, and reaching an actual black means saturating the cream. At that concentration the paste contributes a faint bitterness of its own, and it transfers to whatever the cake touches, which at a party means lips and teeth.

There are two professional ways round it and both are honest. Start from chocolate buttercream, which is already dark and needs a fraction of the help, and accept a very dark brown-black rather than a true one. Or cover the cake in fondant, which is white to start with and is a thin skin rather than the icing, so the dose is small and nobody tastes it. The second is what a true black cake is made of, almost everywhere.

How does gold actually go on a cake?

On top, always. There is no gold buttercream and no gold fondant — mixing towards gold gives a mustard yellow that photographs as beige — so gold on a cake is edible leaf pressed onto the finished surface, or an edible sparkle dusted over it, at £7–£15. Leaf gives the broken, uneven shine people picture; sparkle gives an overall shimmer and is the cheaper of the two.

Which matters for planning: gold is applied last, to a finished cake, so it is the one decoration that can be decided late. It also means gold is at its best in small amounts. A cake with gold on every surface reads as yellow in a photograph; a black cake with one torn band of leaf reads as gold. The toppers page lists everything else that goes on last.

Who orders black and gold?

People planning an evening rather than an afternoon. It is the standing palette for a fortieth and a fiftieth, for a thirtieth with a dress code, and for the kind of party where the invitation says a time rather than a window. It is almost never ordered for children, and it is the one palette that looks better in a room with the lights down than it does in a photograph taken in a kitchen.

Milestone birthdays covers the occasions, birthday cakes for men is where this palette comes up most, and number cakes handles the figure on top.
