Macarons in Bracknell
French macarons are £3 each here, made as decoration on a cake rather than sold by the box: twelve around the top edge of a 6-inch comes to £36 on top of the £100 cake. Each one is two almond-meringue shells with a cream filling, made to order in Bracknell.
Two things are worth knowing before you order. A macaron is not a macaroon — different biscuit, different country, one letter apart. And a filled macaron is better the day after it is made than the day it is made, which is true of almost nothing else in a bakery.

Why does a macaron have feet?
The ruffled rim around the base is called the foot, and it is the one sign of a macaron that has been made properly. Piped shells are left out for twenty to forty minutes until the surface dries to a skin; in the oven the steam inside then cannot escape upwards through that skin, so it pushes out sideways at the bottom and lifts the shell on a frill. Skip the drying and you get a cracked dome with no foot. It is the most failure-prone small thing in a home kitchen, which is why they are priced per item rather than thrown in.
What do macarons do on a cake?
They give a smooth cake a top edge without adding a single flower, and they do it in the cake's own colours. Twelve is the number for a 6-inch — a ring with the macarons just touching — and eighteen to twenty for an eight-inch. They sit on buttercream, so they go on within hours of collection rather than the day before: a shell left on a damp surface overnight softens where it touches.
Macarons against the other top-edge options
Twelve macarons — £36, in any colour, crisp and chewy.
Fresh flowers — free from a florist, wrapped at the stem, nobody eats them.
A meringue crown — egg white and sugar, no almonds, and it does not go soft.
Which colours are honest in a macaron?
Pale ones. The shell is a meringue dried in a cool oven, and the colour has to be in the batter before it bakes, so a deep red or a true black needs so much gel colour that the batter loosens and the foot goes. Pastels, dusty tones and anything with a little brown in it come out exactly as intended; neon does not, in this kitchen or any other. If the party needs a strong colour, the strong colour belongs on the cake and the macarons should sit a shade lighter than it.
