Meringue Cakes in Bracknell

The Kyiv Cake: three thin meringue layers with two layers of cream between them, piped cream on top, hazelnuts pressed around the sides, at £100 for 10 inches. Meringue layers rather than sponge, which makes it lighter, sweeter and quite unlike anything else on the list.

A pavlova is not the same thing and is not made here — the difference is set out below, because the two share two ingredients and nothing else.

Why does a meringue cake get better overnight?

Because the layers are designed to soften. A baked meringue disc is dry and brittle, and sitting against cream it slowly takes moisture out of it — the snap turns to a yielding chew and the layers stop shattering under a fork. That transition is the point of the cake, and it is why the Kyiv is assembled and then left rather than served immediately.

It also sets the window. Too soon and it fights the fork; too late and it is uniformly soft and the contrast between layer and cream has gone. The day after assembly is the answer, which is the same rhythm as the honey and pastry cakes this kitchen is known for.

What is actually in a meringue?

Egg white and sugar, in a ratio, whipped until the sugar has dissolved and then dried rather than baked — a low oven for a long time, because the job is to drive water off without colouring it. There is no flour, no fat and no raising agent. Everything about its texture comes from protein holding air and sugar setting hard as it loses moisture.

That absence of flour is worth stating because people assume otherwise, and it is also where the honest caveat lives: a flourless recipe in a kitchen that handles flour is not a gluten-free product. The gluten page sets out exactly what can and cannot be promised here, and the allergens page lists what the kitchen handles. Our kitchen handles all major allergens (celery, gluten, crustaceans, eggs, fish, lupin, milk, molluscs, mustard, peanuts, sesame, soybeans, sulphur dioxide and sulphites, tree nuts). While we take every care, products may contain traces of allergens.

Pavlova or layered meringue — which did you want?

A pavlova is one shell: crisp outside, marshmallow within, piled with softly whipped cream and fruit, and eaten within hours because the cream begins to soften the shell on contact. It is a dessert made at home and served at the table, and it does not survive being boxed and carried.

A layered meringue cake is the opposite: thin discs, assembled deliberately, improved by waiting, built to be collected and transported. If what you pictured was the pile of cream and berries, the honest answer is to make it yourself on the day — and if what you wanted was something to hand over, this is the cake.

What else do people ask?

Allergies? Our kitchen handles all 14 of the allergens UK law requires us to declare, so nothing we bake is free from any of them. What is in each cake, and our hygiene rating.
