Kyiv Cake, Made to Order in Bracknell
Three thin meringue layers with two layers of cream between them, piped cream on top, hazelnuts pressed around the sides. 10 inches across, £100, and one finish rather than a choice of them.
It is the cake people come looking for by name — Kiev cake, Kyivsky tort — and the one we are asked for most after the honey cake. Meringue rather than sponge, so it is a different thing to eat and a different thing to cut.

What makes a Kyiv cake a Kyiv cake?
The layers. A Kyiv cake is built from three thin meringue layers with two layers of cream between them — meringue baked thin and flat, not sponge — and finished with piped cream on top, hazelnuts pressed around the sides. That construction is the reason it tastes the way it does and the reason it comes in one size: meringue is baked to a size rather than scaled, and a ten-inch round is what this kitchen bakes. Three layers of it, two of cream, and hazelnuts around the outside where another cake would have piping.
The whole specification
10 inches across, £100.
Three thin meringue layers with two layers of cream between them.
Piped cream on top, hazelnuts pressed around the sides.
Contains hazelnuts; made in a kitchen that handles all fourteen major allergens.
One finish only — no themes, no modelling, no colour changes.
How does it compare with the honey cake or the napoleon?
All three are layered and that is where the similarity stops. A medovik is thin baked honey layers softened by sour cream, uniform and gentle. A napoleon is puff pastry that goes from crisp to yielding over a day. A Kyiv cake keeps more of its texture than either: the meringue softens but does not disappear, and the hazelnuts stay exactly as crisp as they started. If you are choosing for a table of people who disagree about cake, it is the one that tastes least like a supermarket cake.
Why is there only one way to have it?
Because the owner decided so, and it is worth saying plainly rather than dressing up as a technical constraint. The Kyiv cake is made in one finish — piped cream on top, hazelnuts pressed around the sides — and if you want a character, a colour scheme or a message modelled on top, that is a custom cake and it is priced with your design. The upside of a fixed cake is that there is nothing to agree: the price on this page is the price, and the only questions left are the date and whether you are collecting.
