Carrot & Walnut Cake, Made to Order in Bracknell

An oil-based spiced carrot sponge with walnuts through the batter, under cream cheese frosting. £110 for a 6-inch — the classic English carrot cake, baked to a recipe rather than built to a design brief.

The other way to have carrot cake here is as a flavour of a custom cake: the same flavour, your theme, priced by size. The carrot cake page sets out which of the two suits you. The walnuts are in the batter either way, so neither has a nut-free version.

What is a classic English carrot cake?

Four things, and all four are in this one. Grated carrot, for moisture rather than for flavour. Warm spice, which is what people actually taste. Oil instead of butter, which decides the texture. And cream cheese frosting instead of buttercream, because the sponge is spiced and slightly acidic and a sweet buttercream fights it. The walnuts go in with the carrot, where they soften into the crumb.

The oil is the part worth understanding before you choose. A butter sponge is creamed, which traps air and sets firm; an oil sponge stays soft and keeps longer, and will not go hard in a fridge. That is why this is the cake to order when it has to be made a day early, and why it behaves better on a warm afternoon than most of what we bake.

The whole specification

6 inches across, £110.

An oil-based spiced carrot sponge with walnuts through the batter.

Cream cheese frosting.

Contains walnuts; made in a kitchen that handles all fourteen major allergens.

Should you order this or a custom cake in carrot?

It comes down to whether you want a cake or a design. This one is a recipe we bake: £110, a 6-inch, finished the way a carrot cake is finished, and the only questions left are the date and whether you are collecting. A custom cake in the carrot flavour starts at £100 for the same width and goes up with the decoration, because what you are paying for there is the design work before any baking starts.

If what sent you here was somebody saying they wanted carrot cake, this is the one. If it was a theme, a character or a colour scheme with carrot underneath it, that is the custom route, and the flavour page covers how carrot behaves under a themed finish. The rest of the cakes we bake to a recipe are on the menu.

Can the walnuts be left out?

No. They are in the batter with the carrot, not sprinkled over the icing at the end, so a version without them is a different recipe rather than the same cake with something omitted — and it is a walnut cake by name. That puts it among the flavours here with no nut-free version, alongside coffee and walnut.

If a nut allergy is the reason you are reading this, the careful answer is on the nut page and it is more careful than a yes: this kitchen handles nuts every week.

How do you keep it once you have it?

Cool, covered, and out of direct sun. Cream cheese frosting is softer than buttercream, so a warm room will slacken it while the sponge underneath stays perfectly happy — shade and a cool table do more for it than a fridge does. Take it out an hour before anybody eats it, because cold mutes the spice. The cake care page has the full advice, and it is the same for this cake as for any of them.

What else do people ask?

Allergies? Our kitchen handles all 14 of the allergens UK law requires us to declare, so nothing we bake is free from any of them. What is in each cake, and our hygiene rating.
