Sugar-Free Cakes: What Is Actually Possible
We do not make them, and the reason is structural rather than stubborn: in a sponge, sugar holds the moisture, softens the crumb and does half the work of keeping the cake edible the next day. Remove it and what comes out of the tin is a different food.
What can be done is make a cake that tastes less sweet, which is usually what people are after — and it is done in the filling rather than in the sponge. A 6-inch from £100, built with a sharp fruit filling and a thin finish, is a noticeably less sweet cake than the same cake under fondant.

Nothing on this page costs extra: a less sweet build is a choice of filling rather than a surcharge. Gluten-free and dairy-free have pages of their own, with different answers.

What is sugar doing in a cake?
Four jobs, and sweetness is only the first. It holds water, which is why a cake with less sugar goes dry in a day. It interferes with the flour proteins, which is what makes the crumb tender rather than bready. It browns in the oven, which is most of what a cake smells of. And in buttercream it is the structure itself — butter and sugar whipped together is a sugar scaffold with fat in it, and without the sugar there is nothing to whip. That is why “sugar-free” in a bakery usually means a substitute rather than an absence.
| What it does | What happens without it |
|---|---|
| Holds moisture | Dry by the next day |
| Tenderises the crumb | Closer to bread than cake |
| Browns in the oven | Pale, and tastes of less |
| Builds the buttercream | Nothing to whip into |
How do you make a cake taste less sweet?
With acid, not with less sugar. A sour cherry, raspberry or lemon filling cuts through buttercream in a way that reducing the sugar by a tenth never does — the palate reads the contrast rather than the quantity. After that: a thinner layer of buttercream, no fondant over the top, and fruit on the cake instead of more icing. The result is a cake somebody who “does not really like cake” will finish, which is the actual goal behind most searches for a sugar-free one.
Ask for these, in this order
A sharp fruit filling — sour cherry, raspberry, lemon.
Less buttercream, and none on the outside if you like.
No fondant: it is the sweetest thing on any cake.
A smaller cake, cut into the slices the room will actually eat.
The finishes and what each one does are set out in buttercream or fondant.
What will this page not tell you?
Whether a cake is suitable for somebody with diabetes or any other condition. That is a medical question and a baker is not the person to answer it — what we can do is tell you precisely what is in the cake and how big a slice is, which is the information that makes the decision possible for whoever is making it. No cake from this kitchen is marketed as a health product, and no claim about sugar content appears anywhere on this site, because making one would require analysis nobody here has run.
Everything the kitchen handles is listed on allergens. Lead time is 7–10 days either way.
What else do people ask?
Allergies? Our kitchen handles all 14 of the allergens UK law requires us to declare, so nothing we bake is free from any of them. What is in each cake, and our hygiene rating.
