What is a cheesecake?

A cheesecake is a filling of soft cheese, sweetened and enriched with cream or eggs, set on a base — most often crushed biscuits bound with butter, sometimes a thin sponge or pastry. Despite the name it is closer to a custard or a mousse than to a sponge cake: there is no flour in the filling, and it is served cold, cut in slices that hold their shape.

Baked or set: what is the difference?

A baked cheesecake — the New York style is the best known — sets in a low oven, and comes out dense, smooth and rich. A no-bake cheesecake sets in the fridge instead and is lighter and softer, closer to a mousse. Both are true cheesecakes; they simply suit different tables. Which one yours will be is agreed in the enquiry, so if you have a preference, lead with it.

Cheesecake or cake for the occasion?

A cheesecake is a dessert first: rich, so slices are cut thinner, and it lives in the fridge until it is served rather than standing out on a table for the afternoon. For a dinner or a family gathering it is often the better choice. For a party where the cake is the centrepiece, carries a theme or needs candles in it, a birthday cake or one of the signature cakes does that job better. The cheesecake is priced like the signature menu, from £100 for a 6-inch.
