Buttercream Cakes in Bracknell

Buttercream is butter whipped with sugar and flavoured, spread over the cake and worked with a palette knife or a piping bag. It is the default finish here: of the 97 cakes photographed and tagged, 52 are buttercream — 29 of them textured, 16 smooth — and 9 are ganache.

From £100 for a 6-inch feeding 8–12, made in Bracknell and delivered across Berkshire. Writing is included; the finish is not an extra.

The finish is part of the cake at these prices. What is quoted on top is piping that takes hours rather than minutes, and the sprayed finishes — the table below has the figures. For the version with chocolate running down the sides, see drip cakes; for the sugar-sheet alternative, see fondant.

Which buttercream finishes can you ask for?

Five, and they are a scale of hours rather than a menu of styles. Smooth is the one a message and a topper sit on best. Textured — ridges pulled with a palette knife, or a shell border piped round the top — is the one most asked for here and the one in 29 of the photographs. Lambeth is the stacked Victorian piping that turns a plain cake into a wedding cake, and it is the only finish priced by the hour of work in it. The table below has what each one adds.

Why does buttercream taste better than a covered cake?

Because it is the same thing as the filling. A buttercream cake is sponge, cream, sponge, cream, and then more of that same cream on the outside — so the outside is part of the cake rather than a lid on it. A fondant cake is a sugar sheet over a layer of buttercream over the sponge, which means the first centimetre of every slice is sugar you did not choose the flavour of.

That is the reason the thirteen signature menu cakes are all cream-finished rather than covered: a medovik or a napoleon is built from thin layers soaked in cream, and putting a sugar skin on one would hide the thing you ordered. Where a cake has to be covered for its shape, there is a page for that and a guide that compares them properly.

What does a buttercream cake need from the room it is going into?

Shade, and somewhere out of a closed car. Butter is soft at hand temperature, so the enemies are direct sun on a window sill, a car boot on a July afternoon, and a radiator nobody thought about. A cool room needs no special handling at all — a buttercream cake will stand on a table for hours perfectly happily as long as the sun is not on it.

If the cake is going to a hot room, an outdoor party or a long drive, say so with the order. The finish and the journey get planned round it — delivery is quoted by distance from £30 and the cake arrives boxed and cold rather than finished and warm. Transporting a cake has the details if you are carrying it yourself, and cake care covers what to do once it is there.
